Roasted Parmesan Potatoes  

Preheat the oven to 450.

Line a baking sheet (with sides) with foil and spray with cooking spray.

Peel and dice:               4 medium russet potatoes

Toss potatoes with:   1 T. vegetable oil

Combine:                            3 T.               Parmesan Cheese, grated

                                                2 t.                  Dried Parsley

                                                1 t.                  Paprika

                                                ½ t.                 Garlic powder

                                                1 t.                  Salt

                                                1/8 t.                        Cayenne pepper (opt.)

Toss potatoes in the Parmesan Cheese mixture to coat evenly.  Arrange potatoes in a single layer on the prepared baking sheet.  Bake, stirring slightly, until potatoes are lightly browned and tender about 25 minutes.

Notes:

·        ¼ c. Bacon can be added to the Parmesan Cheese mixture

·        My family preferred this dish without the Cayenne pepper.
