Cranberry-Pecan Wild Rice

 

2 Boxes (6 oz. each) long-grain and wild rice (with herbs and seasonings included)

½ c. butter or margarine

1 ½ c. dried or fresh cranberries

1 c. chopped pecans

 

Prepare rice according to package instructions.  When rice begins to boil, add cranberries, butter and pecans.  Cook rice as directed until done.

 

Makes 8 servings

 

Notes:

·        I use Uncle Ben’s original box mix.  I have not tried it with the fast cook version.

·        You can decrease the butter if you are calorie conscience.

·        This recipe easily can be halved for a smaller family.

·        You can make this at home ahead of time and take to a dinner in a crock pot to keep it warm.  It holds heat well.
