Chicken Salad

(Served on Croissants)

 

Combine:                2 c. cubed cooked chicken

                                    1 c. cubed or shredded cheese of your choice, opt.

                                    ½ c. dill pickle relish

 

Combine and Add:            2/3 c. mayonnaise

                                                1 T. minced parsley

                                                1 t. lemon juice

                                                ½ t. seasoned salt

                                                1/8 t. pepper

 

Serve with ruffle lettuce on a split croissant.  Serves 6.

 

Note:

·       Small party croissants are easier to handle and look nice on a party platter.  Any sandwich or dinner roll may be used.

·       You could opt. to leave out the cheese and serve slices separately.  Leftovers will store better without the cheese.
